Grilled Avocado With Salsa

Ingredients:

3 avocados, halved and pits removed
1 tablespoon lime juice
1 tablespoon olive oil
1 tablespoon cilantro, chopped
1 lime, cut into wedges
Salt, to taste
Salsa of choice
Low-fat sour cream or Greek yogurt, for garnish(optional)

Procedure:

  1. Preheat a grill to medium-high heat.
  2. Whisk together the lime juice and olive oil in a small bowl.
  3. Brush each avocado half with the lime juice marinade.
  4. Place each prepared avocado half, flesh side down,over the hot grill. Cook for about 5-7 minutes, or until grill marks appear and the avocado is warm, but not overly mushy.
  5. Remove the avocado halves from the grill and fill the hole left by the pits with salsa.
  6. Squeeze the wedge of lime over the avocado halves and sprinkle lightly with salt. Top the salsa with cilantro and a dollop sour cream or Greek yogurt, if using.

Grilled Corn, Tomato and Avocado Bread Cups

Ingredients:

6 slices sprouted bread
1 ear corn, shucked and cleaned
8-10 cherry tomatoes
1/2 Red/Spanish onion, sliced
1/2 avocado, mashed
2 tablespoons grated Parmesan cheese
Salt, pepper to taste
Oil for grill
Cilantro, for garnish (optional)

Procedure:

  1. Preheat the oven to 375F and spray a muffin tin. Cut the edges of the bread off then use a rolling pin to flatten the bread. Once it is flat, press bread slices into muffin tins. Bake it in the preheated oven for 12-15 minutes until crispy.
  2. Heat a grill pan over medium heat and gently brush it with oil. Place tomatoes and corn on the pan. Let it grill for 8-10 minutes on each side. Remove from the pan once corn is grilled evenly and tomatoes are soft. Using a pairing knife, cut the kernels off the cob into a small bowl.
  3. Meanwhile, heat another pan with a little oil and saute onion until it is soft. Combine corn kernels and tomatoes into the pan with sauteed onions. Add in mashed avocado and Parmesan cheese if using. Season it with salt and pepper as needed.
  4. Add fillings evenly into bread cups, sprinkle more Parmesan cheese if desired. Let it bake for additional 3-5 minutes. Garnish with cilantro before serving.
