New York Times ArticleThrough our Ark USA program, Slow Food and Heritage Foods has adopted 10 traditional turkey varieties near extinction - including the Narragansett, the Bourbon Red, and the Standard Bronze. These Heritage turkeys were developed to have rich, savory meat and therefore take longer and cost more to raise than industrial birds. We are now working with farmers across the country to reintroduce these varieties to the market, and we invite you to join in the revival of this delicious holiday tradition by purchasing a Heritage turkey for your Thanksgiving dinner.
