Terra Madre, the Slow Food International biannual gathering, will be happening in Torino, Italy, in late October. In celebration, Chef Higgins will create an Italian feast, using a heritage breed of hog from Stan Schutte at Triple S Farms. (Stan and his son Ryan have each attended TerraMadre.) The deadline for reservations and advance payment is Friday, October19.
