Jim and Kathy began to cook with home grown organic herbs
30 years ago when they married and acquired her grandparent's
country home and existing herb garden. To stretch the beautiful
flavors of their herbs into the Chicago, Illinois winters,
they started preserving the flavors in vinegars as gifts.
Soon their friends and family encouraged them to try selling
their vinegars (at the time) fledging farmer's markets next
to the growers of lettuce, etc. Their first year of production
was sold in sanitized recycled beer bottles from local taverns!
Herbally Yours is truly a family operation, with Jim being
the salesperson, his wife producing the various flavors and
his daughter with her background in graphic design and advertising,
deciding to seal their bottles with recycled school crayons.
They now use culinary bottles but all aging and bottling
is performed in house in small kitchen batches and oh yes,
they still recycle bottles!
