Hutterite Soup Bean
Phaseolus vulgaris
The Hutterite Soup Bean is named for the Hutterites, a religious community that immigrated to the high mountain region of Taos, New Mexico from Austria in the 1760's. With a delicate and buttery taste, this bean quickly became a staple food of the Hutterite people’s sojourn in the US. No oil is necessary to successfully cook down the Hutterite Soup bean into a thick and creamy chowder, as its texture is already dense and its residue naturally oily. In terms of harvest, this bean is extremely productive and fast growing.
